You've been cooking a brisket for six hours. The pit is holding steady at 250°F. The internal temp climbed steadily all morning — 140, 150, 160 — and then it just stopped. An hour passes. Maybe two. The thermometer reads 165°F and hasn't moved. You check the probe. You check the pit temp. Everything looks right. Nothing is wrong. You're in the stall.
The stall is one of those BBQ phenomena that separates the people who've cooked enough large cuts to understand what's actually happening from the people who panic, crank the heat, wrap too early, or pull the meat before it's ready. Understanding it doesn't make it less aggravating — but it does make you a better cook.

Here's what's happening. As the internal temperature of the meat rises through the 150–170°F range, moisture begins evaporating from the surface at a rate fast enough to counteract the heat being added. It's essentially the same mechanism as sweating — evaporative cooling. The meat is shedding moisture, and that evaporation is absorbing the energy from the pit before it can drive the internal temp higher. The result is a plateau that can last anywhere from one to four hours depending on the size of the cut, fat content, humidity, pit temp, and airflow.
Briskets stall hard because they're large, heavily marbled, and contain a significant amount of collagen that needs to break down — a process that itself requires sustained heat over time. Pork shoulders stall for the same reasons. Leaner cuts stall less dramatically because there's less moisture and fat to evaporate. Understanding this tells you the most important thing about managing the stall: it is not a problem to solve. It is a process to respect.

The Texas Crutch — wrapping in foil — was invented specifically to push through the stall faster by eliminating the evaporative surface. It works. The meat steams through the plateau quickly and you lose an hour or two of cook time. What you also lose is bark development. Foil traps moisture against the surface, and a bark that took hours to build can soften significantly in the wrap. Butcher paper is a better compromise — it breathes enough to preserve most of your bark while still accelerating the final push through the stall.
Our approach: hold the stall unwrapped as long as your schedule allows, wrap in butcher paper at 165–170°F, and let the pit do the rest. If you're cooking for a specific time and need to manage pace, wrap earlier. If you've got the day, let it ride. The cook has its own schedule. Learn to work with it rather than against it.
